Growing up with a mother who was raised in the deep South, we had lots of fried classic Southern dishes and Onion Rings were always one of our favorites. Certainly fried food are not the best for our health but it is hard to break away from our favorites like fried onion rings, fried okra, fried green tomatoes, fried cauliflower, fried pork chops, chicken fried steak …. - 1 Acorn Squash cut in half seeds removed
- 2 Cinnamon Sticks
- 4 Star Anise
- 2 Tablespoons Dried Cranberries or Cherries
- 2 Tablespoons Walnuts
- 2 Tablespoons Honey
- 1 teaspoon Sea Salt
- 2 Pinches of LOVE
Nutrition InformationServing size: 1 piece Calories: 135 Fat: 1g Carbohydrates: 25g Protein: 3g3.2.2124
- Preheat oven to 400*F/204*C/Gas Mark 6
- Split ingredients in half between the squash and fill the cavity Place squash halves in oven safe dish and add about a ¼” water to dish
- Bake for 30-40 minutes and enjoy directly out of squash

I have loved Banana Nut Bread for as long as I can remember !! I can remember my first experience with banana nut bread, I was about 10 years old and my Great Aunt Marlene had made a fresh homemade pan while we were in South Carolina. I must first apologize for my recent absence since the Holidays but we were lucky enough to have family in town staying with us and my nephews were home from college. I have also been battling a brutal case of the flu for the past two weeks. Over the holidays I cooked several dishes and while I was preparing the homemade bacon bits for one of the recipes, I had some leftover chopped herbs sitting on the cutting board and decided to see how they would work with the bacon. Here is a really great recipe that will make meal prepping a snap for those of you who are doing that.. This recipe is so easy to add your favorite ingredients to give it your personal touch. You can make this recipe in a pie dish or a square casserole dish. A serving of this quiche can be used as a mini meal as it has your protein, carbohydrates and even veggies. We sometimes will make a homemade pizza sauce and drizzle that over this to make it a healthy slice of ‘pizza’.
